Very ripe tomatoes
4 cloves
Garlic, minced
2 tablespoons
Extra virgin olive oil
2 tablespoons
Lemon juice
2 tablespoons
Fresh basil, thinly sliced
Salt and pepper to taste

Boneless flounder fillets
Step by Step Instructions
- Preheat oven to 425. In a large baking dish toss the tomatoes, garlic, olive oil, lemon juice, and basil together. Bake this mixture for 5 minutes.
- Season the flounder with salt and pepper to taste, then arrange it over the tomato mixture.
- Roast the flounder and tomato mixture for about 10 more minutes, then serve.
