Braised Bone In Goat

Serves: 4


Ingredients
3 or 4 pounds Bone-in goat meat cubes
1 Onion (roughly chopped)
4 cloves Garlic (roughly chopped)
2 stalks Celery (roughly chopped)
2 medium sized Carrots (roughly chopped)
1 Bay leaf
1 tablespoon Pepper
1/2 cup Red wine
1/2 cup Beef stock
Salt
Olive oil
Additional herbs for flavoring such as:
Rosemary
Basil
and/or thyme
Some side suggestions are:
Rice
Broccoli
Asparagus
Green beans
Corn

Step by Step Instructions
  1. Preheat oven to 250 degrees. Add oil to a heavy Dutch oven and let it heat to just below smoking. Once the oil is ready, brown the meat in batches.
  2. Drain the excess oil from the Dutch oven, return it to the heat, and put the onion, carrot, celery, and garlic into it. Cook just enough to let the vegetables sweat.
  3. Add the wine, goat, onion, garlic, celery, carrots, salt, pepper, and any herbs of choice. Stir things together and add the beef stock.
  4. Cover the Dutch oven with a lid, put it into the oven and let cook for 2 to 3 hours. Check after 2 hours and if needed add more beef stock.
  5. Once the meat falls off the bone it is ready to be served with rice and/or steamed veggies.
