Beet Gratin

Ingredients
1 bunch
Beets (with greens)
1 tablespoon
Olive oil
2 large
Cloves of garlic
3
Eggs
3/4 cup
Milk
1/3 cup
Chives (chopped)
4
Scallions
Salt & pepper to taste
2 ounces
Mozzarella Cheese
Step by Step Instructions
- Preheat oven to 300 degrees and wrap the beets in aluminum foil. Roast the beets, then slice them into rounds once they have cooled.
- Blanch the beets by boiling a pot of water, submerging them for 1 minute, then dunk them into a bowl of ice water. Drain away the ice water.
- Heat the oil over medium heat in a frying pan, then add the garlic and beet greens and cook for 3 minutes.
- Mix the eggs, milk, chives and scallions together, then pour the mixture into a casserole dish. Stir in the greens & sliced beets. Season to taste and sprinkle mozzarella over the top.
- Preheat oven to 375 degrees, then bake for 40 minutes. Let cool for 10 minutes, then slice.
