Serves: 12-16 rolls
Vegetarian!

Ingredients
3 1/2 cups Bread flour or all purpose flour
3/4 cup Water
1 tablespoon Fast acting yeast
2 tablespoons Sugar
1 teaspoon Ground ginger
1/2 cup 2% Milk
6 tablespoons Unsalted butter (plus some to grease the bowl)
1 Egg (beaten)
1 1/2 teaspoons Salt
1 tablespoon Minced fresh sage
1 tablespoon Minced fresh thyme
1 tablespoon Minced fresh rosemary
Fresh parsley (roughly chopped, for garnish)

Step by Step Instructions
  1. Melt the butter in a skillet over medium heat, stirring constantly. Let it continue to cook for 6 to 8 minutes, still stirring constantly. Once the butter is brown with deep brown specks, remove it from the heat and pour it into a heat-safe container and set it aside.
  2. Preheat oven to 400 degrees and line a 9 by 13 inch baking dish with parchment paper (or grease it instead).
  3. Heat the water, sugar, 4 tablespoons of the browned butter, and milk for 1 minute in a microwave safe bowl in 10-15 second increments (whisking the mixture at each pause).
  4. Fit the dough hook attachment to a stand-mixer. Put the heated liquid mixture into the mixing bowl and add the yeast. Let sit for 10 to 15 minutes.
  5. Add the flour, salt, ginger, herbs, and egg to the bowl. Mix the dough on the slowest setting for 1 to 2 minutes. Add an additional 1/4 cup of flour and let mix for 1 more minute if the dough is too sticky.
  6. Once the dough pulls itself away from the sides of the bowl, increase the speed of the mixer to medium and let mix for 5 minutes. Grease a bowl with butter and transfer the dough into it, cover the top with plastic wrap and let it sit for 20 minutes.
  7. Turn the dough out onto a well floured surface and cut it into equal pieces. For each piece, fold the seam in and roll into a ball. Put the rolls seam-side down into the prepared baking dish.
  8. Cover the baking dish with plastic wrap and let sit for 20 more minutes. Discard the plastic wrap and brush each roll with 1 tablespoon of brown butter.
  9. Bake for 15 to 20 minutes, then brush with remaining brown butter and garnish with chopped parsley.
